We use this one for the holidays: it is all-vegetable with no extra oils, and not very spicy, but has enough fresh flavor to liven up that turkey, beef, or pork so that people can gag it down while waiting for the dessert. Although it takes a little longer than your average gravy, this tomatillo sauce works as a great substitute for gravy or vinaigrette.
Ingredients
1lb tomatillo
1 large poblano pepper
1 medium lime
1 bundle cilantro
4 small avocados
1 tsp sea salt
Procedure
Cut poblano and tomatillos into thin slices
Roast at 425F for 20-30 minutes
Cool and add to food processor with cilantro leaf and avocado
While blending, add salt, then lime juice
When blended to creamy state, serve
If you want more liquid, add distilled water during blending
